Same health benefits but dissolves better in cold liquids. You can also replace the gelatin with Chia seeds I use milled seeds Chia seeds thicken every smoothie and add lots of good stuff as well.

Gelatin has more benefits than chia. Chia can be hard to digest and cause problems for people with autoimmune diseases. I only use it occasionally as an egg substitute in recipes.
